The late harvest comes from the Sao Silvestre farm near the town of Carmo do Paranaiba in the state of Minas Gerais. The Andrade family has been running this farm at an altitude of 1,000 to 1,100 metres for several generations. The coffee is, of course, processed. The freshly harvested coffee cherries are dried in the sun and then peeled. The aroma is reminiscent of dark chocolate with a hint of nougat and a light fruity note. Roast master Rehorik was on site for three weeks in 2009 to convince himself of the quality of the cultivation and processing.
