On the island of Celebes, located between Borneo and New Guinea and called Sulawesi in Indonesian, one of the most famous coffees in the world is growing. Our Sulawesi-Kalosi comes from Torajaland, where the best coffee is produced. The small town of Kalosi in the centre of Sulawesi serves as a collection point for coffee production. Our `Alter Kalosi-Toraja` is a rarity, because it is stored for several years in tropical humid climate with good air circulation. During natural fermentation, the coffee loses its acidity and the green coffee gradually changes its colour from blue-green to brown. The matured green coffee is milder, the typical aromas are deeper, more complex, more intense and long-lasting. Our'Old Kalosi-Toraja' is extremely aromatic, with a pronounced fullness reminiscent of maple syrup. It contains practically no acidity and develops in the cup an extraordinary deep, complex fullness of taste with prominent sweet and wonderfully spicy notes reminiscent of lush forest soil (wild mushrooms, autumn leaves, moss,...) and tropical woods.
