I have been the owner of a Caffeo CI for about one week now.
I have about 50 covers on the machine at the moment, but unfortunately I haven't been able to drink more than 10 - 15 coffees because they all tasted extremely bad.
Before the CI I had a Nespresso lattisima, based on the comparison machine my perception of the coffee is related. For example, I find a Kazahr with 25 ml to be intense in taste, but neither bitter nor sour.
I have already tried several bean varieties at CI, e.g. Espresso Crema of the brand "JA! natürlich" (Sold in Österrecih at a REWE Group shop as organic fair trade coffee). But I have already ordered coffee like this: "GEPA Mexico Bio Cafe Chiapas Bean" from Amazon. Or also a coffee from a local espresso/juice bar (Buna).
However, no matter what I adjust, the coffee is always sour. If I set it to 40ml, hot, 4 beans (starch) and finest grind, the coffee is bitter with an acid aftertaste...
So I can get it bitter, but the acid never goes away...
After a little googling I looked at what makes the coffee sour, I tried to adjust the machine so that I get the sour off, but without any success.
One thing I noticed was that the coffee is sour everywhere when the brewing time is too short, unfortunately I can't adjust the CI. Now my question to the owners of the Caffeo CI`s:
How long does it take your machine to make an espresso?
When I press the espresso button I get 40ml from the machine (which is quite a lot from the quantity). The machine only needs 5 - 8 seconds for such a quantity of coffee, depending on the degree of grinding and temperature. The nominal value is 15 - 25 seconds for 25 ml. So my brewing time is extremely short, is that normal? Or is my device defective? Is the Üulver perhaps not properly compressed? The pomace also appears moist to me.

Edit: The 5 - 8 seconds refer purely to the brewing time, without grinding and without pre-brewing.
