Charles Darwin observed in 1835 during the first scientific expedition on this archipelago, the unique animal world caused by the complete geographical isolation. Manuel J. Cobos first planted coffee with French agronomists in 1879 on the island of Chatham, now San Cristobal. These were Arabica plants of the variety Bourbon, which had previously been imported from French colonies. These coffee trees, planted some 120 years ago, still produce excellent coffee beans today. Normally, coffee shrubs are expected to last 30 - 40 years. Today, the Galapagos Islands produce around 6,000 bags of coffee, 3,000 of which come from the island of San Cristobal. The coffee trees grow on relatively young, nutrient-rich volcanic soil. The completely intact ecosystem and unique microclimate - any use of pesticides, fungicides, herbicides and chemical fertilizers is prohibited - allows the production of the best organic coffee. Galapagos coffee thrives under shade trees (avocados guavas and oranges). Only organic substances that occur naturally are used for fertilization. Twice a year, the ripe coffee cherries are harvested by hand and then taken to the so-called wet reficio, where the coffee beans are separated from the pulp. In this process, too, strict attention is paid to the lowest possible environmental impact and high water purity and product quality.
