An Ethiopian legend tells that one day the goat herd of the young shepherd Kaldi came across small trees carrying these bright red cherries. After the goats had eaten some of these fruits, they were unusually lively. Kaldi also tried it and was happy that he was more alert and better able to herd his goats during the night. One day, when Kaldi told a monk about this extraordinary fruit, he became curious. Soon afterwards all the monks in the neighbouring monastery ate coffee cherries and enjoyed the invigorating effect during their night prayers. It is said that Ethiopia is the country of origin of the Arabica coffee tree. It thrives best at altitudes of 1200 to 1800 metres. Main harvest time is from October to December. Only 2% of the coffee harvest comes from state farms. Almost half of the country's population works on coffee farms, so coffee exports are an important source of income. 98% of Ethiopian coffee (including our Limu) is planted by many small farmers whose coffee gardens are no larger than one hectare. This means that they can care for every single coffee tree and this is noticeable later in the cup through an extraordinary aroma. The Limu bears the name of its cultivation region, which is located in the south under the Lekempti region. Like the Yirgacheffe & Sidamo, the Limu is also washed during processing. This method is only used for the best varieties.
