A coffee rarity from the highlands of Mexico, the state of Chiapas near Motozinta. This region is characterized by the volcanic mountain range Sierra Madre de Chiapas. The robust, mountainous home of the coffee plants Arabica is protected from the storms of the Pacific Ocean, yet rich in rain and sun. The iron-rich, volcanic soils of this region are ideal for the cultivation of excellent coffee. The coffee is grown at altitudes of 1200-1600m. Harvesting is naturally done by hand. Equally careful is the strict quality control before the Berilo is exported. It has the quality classifications SHG (strictly high grown), i.e. exclusively highland coffee and EP (European preparation), a preparation optimised for the European market. This coffee is full-bodied and balanced with a fine fruity note. It has a medium spicy, delicate sweet-malty aroma and is said to have a light note of marasca cherry. The balanced taste and the very fine acidity with a medium, balanced body provide a velvety, pleasant mouth feel. Gentle finish.
