This is a coffee service from the south of India. The raw beans are first exposed to monsoon rain for a few days. It is then dried for 12 to 14 weeks in the monsoon winds on the Malabar coast. The moisture of the bean decreases and the colour changes to pale yellow. The special way of preparation gives this coffee its unmistakable mild and lingering taste. Its malty and slightly chocolaty aroma and balanced, powerful body are further characteristics of this coffee rarity. The loss of natural acid during processing makes it particularly stomach-friendly!
