This coffee speciality is grown on the slopes of the Cordillera, the mountain range of Panama, at an altitude of 1,200 to 1,400 m above sea level by the Ruiz family of farmers. The continuously prevailing cool north winds slow down the ripening of the coffee cherry and thus allow particularly complex flavours to be stored.
