Mysterious rarity from the Toraja family gardens This unique coffee rarity of exquisite taste is grown on the volcanic soils around Mount Sesean on the Indonesian island of Sulawesi by the Toraja in their family gardens. Only fully ripe red cherries are harvested by Tongkonan (family association). The freshly picked fruits are then filled into wooden barrels and covered with pure spring water. The flesh is removed by constant, careful pounding with a pestle and the coffee is carefully washed. The still moist coffee beans are spread out in the warm tropical sun and gently dried with constant turning. This can take three to four weeks, as the coffee has to be collected again and again when there is the threat of rain and stored in woven baskets. After drying is complete, the members of Tongkonan Toraja come together and remove the jade-coloured coffee beans by hand from the parchment that surrounds them. Only the flawless beans are selected and stored in small cotton bags for export. The beans are exported in small hand-carved wooden barrels.
