The Marcala region is known for its excellent green coffee qualities and is now increasingly focusing on sustainability in cultivation. Coffee has become a part of history, culture and livelihood for the people who live there, which is why coffee producers in this region are passionate about it. The subtropical climate offers optimal conditions for the cultivation of high-quality Arabica coffee qualities, which has already made the region around Marcala famous and popular with most roasters in Germany. These coffees are washed and processed. The fresh, ripe coffee cherries are mainly harvested by hand and pre-sorted in water tanks or alluvial channels. Then the coffee cherries are sent through the pulper. With this machine the flesh is squeezed off the beans in such a way that they remain undamaged in their parchment skin, which is still surrounded by a layer of mucus.
