Flores Bajawa Coffee is an Indonesian organic coffee with tradition. It comes from the island of Flores, the largest island of the Sunda archipelago. Small farmers of the Bajawa people grow it there. Coffee cultivation is one of the main sources of income for the 100,000 indigenous people. In order to better exploit the economic potential of their premium coffee, the Bajawa have founded a cooperative. Volcanic weathered soils and the humid sea climate, combined with temperature-stable altitudes of 1,500 to 1,600 metres, offer ideal growing conditions for excellent premium coffee. Shade trees protect it from too intensive sunlight and wind. These locations are among the highest growing areas in Indonesia. The Arabicas Catimor and Tipica grow here. They are harvested from May to early June. "Selective Picking" is the method by which the Bajawa regularly and exclusively pick the ripe coffee cherries by hand. The processing is carried out wet (fully washed) in our own plants. This ensures optimum quality control right through to the finished green coffee. Wet processing ensures the optimum development of the aromas that characterise the heavy, extremely full-bodied coffees. Flores Bajawa Coffee is therefore ideal for both filter coffee and espresso, precisely because it produces a perfect crema in the cup.
