Doi Chang Around the Doi Chang Mountains, 65 coffee farmers who cultivate small and medium-sized areas have joined forces to form a cooperative. The members have been working hand in hand for 15 years and have defined their quality standards with their own 48-step system. The plantations lie at an altitude of 1,500m to 1,700m - here the coffee plants were combined with shade-giving trees and fallow areas were reforested by fruit trees. The climate at these altitudes is very mild and has constant temperatures, which provide optimal conditions for coffee cultivation. Finished coffee cherries are picked exclusively by hand and then mechanically processed. After processing, the beans are sorted again by hand and packed in jute bags or grain pro bags for transport. The Mystic Hilltribe Project Jürgen Wittmann & Nussara Laomee founded the company `MYSTIC HILLTRIBE - Thailand` in 2014 and have been trying since coffee and tea to import directly to Germany without intermediaries. The farmers are supported economically with pre-financing and a fair price for their green coffee. During the tasting we liked the Doi Chang especially with its lightness and the almost non-existent acidity.
